1 quart chicken stock
2 pounds of baby carrots
3 cloves garlic
1" ginger
1 large onion
Freshly ground pepper to taste
Cook on the stove until everything is soft. After cooking, put all items in a food processor or blender until thoroughly chopped.
Just so you know, the soup can also be prepared by processing all raw ingredients before cooking. Either way should work, however, I have eaten the soup using the primary method, above, and it's WONDERFUL!
