Stuffed Tomatoes

A delightful meal anytime.
Ingredients:
Begin the recipe with 3 red, orange or yellow tomatos. Cut off a bit from the the top and also a small sliver from the bottom so it will sit flat on the plate.
Scoop out the middle of the tomato to make room for filling.
Fill with Summertime Salsa, Guacamole or other yummy filling.
Fill with cucumber wedges.
Find a comfortable chair and enjoy your cool snack.
