Raw Zucchini Casserole Recipe

In addition to being a yummy dish, this rawtarian dish is absolutely loaded with vitamins and minerals. It is low in calories and fat and makes a very satisfying main dish. Include as an entree with a mixed green salad and you've got a great meal.

Ingredients:
3 medium zuccchini's, diced
2 large carrots, diced
2 celery stalks, diced
1 red bell pepper, diced
1 large yellow onion, diced
2 Tbsp. extra-virgin olive oil
3 medium tomatoes, diced
Red pepper flakes
1 tsp. dried basil
1/2 tsp. dried oregano
Pinch of ground allspice
3 cloves garlic, chopped
3 Tbsp. sunflower or sesame seeds
Juice from 1 lemon

Simply mix all ingredients in a large serving bowl.
