Joan's Spanish Rice Recipe

Obviously my preferred diet is RAW VEGAN food which is the focus of this weblog. However, although I do not advocate consuming any cooked food, this is one more recipe that compromises my dietary objectives. As far as cooked food goes, however, this is a relatively safe meal option. Once in awhile I will allow a particularly healthy, although cooked, recipe to be posted.
Because my weblog has been compromised (by me) I've still attempted to produce a healthier recipe than the recipes to which you have become accustomed.

SPANISH RICE

Boil 1 and 1/4 cup water with 1 tablespoon olive oil, then add 1 cup long grain brown rice and simmer for 1 1/2 hours, stirring occassionally.

Add the following and simmer for an additional 20 minutes:

1 cup chopped onion
1 minced garlic clove
2 green peppers, diced
2 cups diced tomatoes
Stir in 1 cup canned, drained corn and enough turmeric to add a slight golden color to rice (approximately 1/2 teaspoon). Simmer for an additional 3 minutes.
