Yam and Carrot Salad

Enjoy this root vegetable snack for an afternoon lift or a dinner salad.
Salad Ingredients:
2 yams, shredded
1 bag pre-shredded carrots
1/2 cup raisins

Dressing Ingredients:
1/4 cup red wine vinegar
2 Tbsp. extra virgin olive oil
2 tsp. chopped fresh mint
Enjoy!
